Heatlhy yummy snack: organic Quinoa & Petits Pois with Tarragon
This is a snack I have been eating for years. My father used to cook it for me when I was feeling a little off and it worked a treat. My dear Dad had spent the first 30 years of his life living in Egypt and despite not being originally from there, his entire culinary upbringing was very much tinted by the Middle East.
This really simple and healthy snack has as main ingredient Organic Quinoa.
High in fiber and protein, and low in fat and calories, quinoa is another food that offers bulk and nutrients to fill you up without adding pounds.
Ingredients
2 cups organic quinoa
150g of fresh peas (Petits Pois, organic IF possible)
100g of fresh natural yoghurt
Tarragon – Cumin – Salt – Pepper
How to make?
Rince the quinoa before you cook it. Put into a pan filled with 4 cups of cold salted water. Bring to the boil and once reached, let simmer for 15mn (until it is no longer hard and is chewy and it has doubled in size at least). Strain.
Cook your Peas in boiling water until Al dente (don’t let them get chewy).
Put your quinoa in a bowl, mix in the peas. Sprinkle in a pinch of Cumin (to taste but go easy, this is a strong taste), two table spoons of tarragon, salt and pepper. Mix carefully (so the peas don’t break up). Serve with a generous dollop of plain yoghurt on top (this is optional).
The chewy quinoa and al dente peas really compliment each other and I love the mix of cumin and tarragon. What’s more, this is super healthy and filling.
