Rose Bakery’s organic beetroot, carrot and tomato salad
I make this all the time and feel so good about eating it!!!
Beetroot is a super rich source of potent antioxidants and nutrients, including magnesium, sodium, potassium and vitamin C, and betaine, which is important for cardiovascular health.
Carrots are also rich in dietary fibre, antioxidants, and minerals. Medically, the roots are used to treat digestive problems, intestinal parasites and tonsillitis.
Tomatoes benefit the heart, among other organs. They contain the carotene lycopene, one of the most powerful natural antioxidants. In some studies, lycopene, especially in cooked tomatoes, has been found to help prevent prostate cancer. Actually a study done by researchers at Manchester and Newcastle universities revealed that tomato can protect against sunburn and help keeping the skin looking youthful! Reason enough to eat loads!!!!
The Rose Bakery‘s inspired Organic Beetroot, Carrot and cherry Tomato salad
Go to your local organic store or farmer and select 4 large beetroots, 8 carrots and 500g cherry tomatoes and 1 red onion. Make sure you cut the beetroot into cubes, you can then either shred the carrots and onion or slice them finely. Mix these into a bowl with your cherry tomatoes.
Dressing: 4 table spoons organic olive oil, 3 of balsamic vinegar, a large pinch of sea salt, pepper, and a tablespoon of natural honey. Mix together in a bowl.
Best is to actually mix your dressing a few hours before you serve the salad and store it in the fridge. The carrots will drink up the dressing nicely and the beetroots have time to coat themselves in it.
You can also add pine nuts or walnuts. Eat with organic toasted bread. Delicious.
