The Pumpkin Pancake

Pumpkin pancake

I was just making a fresh batch using my french crepes recipe I always useand the two came together! I dug through my numerous lovely cookbooks and came up with this recipe. It really is warming and autumnal. And it means I got to use the inside of my pumpkins as well!

Happy orange tinted cooking, hope you like the syrup recipe too, it’s SO tasty (and gratifying to make your OWN).

Ingredients for the pancakes:
1 cup flour
1 1/2 Tbs brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cup milk
1/2 cup pumpkin puree
1 egg
1 Tbs vegetable oil
1 Tbs vinegar

How to make:
In a bowl (or as in your KitchenAid/blender) mix together the milk, pumpkin, egg, oil and vinegar. In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon and salt. Stir into the pumpkin mixture just enough to combine.

Basically then cook the same way as you would your normal pancake (or use these guidelines).

Coat with Homemade Cinnamon Syrup

      Ah good, I am glad you have been inspired Lynne! I ALSO eat them as a midnight snack. And then spend five hours on a treadmill ;-))
